If you can find it, it is like a big bible!! Wonderful stuff in it too...not
just the usual boring vegetarian fare:
From American Wholefoods Cuisine
Nikki & David Goldbrick
White Sauce Mix
Makes 3 cups mix
1 c. whole wheat flour
2-1/2 c. nonfat dry milk powder
1 Tbsp. salt
Combine all ingredients. Store in a covered container at
room temperature. Shake well before each use to distribute
ingredients evenly.
To Make White Sauce:
Thin Sauce: 3 T. mix + 1 c. milk, water or combination
Med. Sauce: 1/2 c. mix + 1 c. water or equal parts milk
and water
Thick Sauce: 2/3 c. mix + 1 c. water
Combine dry mix with enough of the liquid to make a smooth
paste. Stir in remaining liquid and cook over moderate heat
continuing to stir frequently, until sauce thickens and
comes to a boil. Boil gently for 1-2 minutes.
Makes 1 cup sauce

Mushroom Sauce Mix
Makes 3-3/4 c. mix
1/2 oz (about 2/3 cup) dried mushrooms
1 c. whole wheat flour
2-1/2 c. nonfat dry milk powder
1 T. salt
1 tsp. nutmeg
2 T. nutritional yeast
Crush half the mushrooms until quite small and leave the
remainder as they come.
Combine all ingredients and store in a covered container at
room temperature. Mix thoroughly before each use.
Quick Mushroom Sauce:
Medium Sauce: 6 T. mix+ 1 c. water
Thick Sauce: 3/4 c. mix + 1 c. water
Combine dry mix with some of the water to make a smooth
paste, using about 1/4 c. liquid to 6 T. mix. Add remaining
water and stir continuously over moderate heat until sauce
thickens and comes to a boil. Boil gently for 1-2 minutes
to cook out the raw flour taste.
Makeds 1 c.

1 T Instant Minced Onion
1 t Instant Beef Bouillon
1/8 t Minced Garlic
Combine all ingredients in a small bowl; blend well. Spoon mixture onto a

Bacon-Flavored Dip Mix. Store in a cool, dry place and use within 6
months.
Makes 1 package (about 3 T) of mix.

VARIATIONS: Substitute 1 cup yogurt, 1 cup cottage cheese or 1 (8 oz)

1/2 t Salt
1/2 t Celery Seed
1 x Dash Pepper
1/8 t Garlic Powder
Combine all ingredients in a small bowl; blend well. Spoon mixture onto a
6-inch square of aluminum foil and fold to make airtight. Label as Sesame
Cheese Dip Mix. Store in a cool, dry place and use within 4 months.
Makes 1 package (about 2 T) of mix. This recipe can be increased to make
more packages.
