Recipe: Painted Desert Chili Mix in a Jar and Cowboy Chili in a bowl (gift mixes)

PAINTED DESERT CHILI MIX IN A JAR

"The ingredients are layered, like sand art. Don't worry about getting the layers even. The desert effect comes from the rippled appearance of the spices. One tip is to carefully add each seasoning along the edges of the jar, then fill in the middle of the layer. This way all of the beautiful colors show along all of the edges."

LAYER IN THIS ORDER IN A 1 QUART JAR:
1/4 cup dried parsley
2 tablespoons granulated garlic
2 tablespoons taco seasoning
2 tablespoons dried onion flakes
2 tablespoons taco seasoning
2 tablespoons cumin
2 tablespoons paprika
2 tablespoons white cornmeal
2 tablespoons taco seasoning
2 tablespoons granulated garlic
2 tablespoons chili powder
2 tablespoons dried parsley
1 cup dried pinto beans
1/4 cup small dried white beans
1/4 cup small dried black beans
Approximately 1 cup dried kidney beans

ATTACH THESE INSTRUCTIONS TO THE JAR:

TO MAKE PAINTED DESERT CHILI:

Pour contents of jar into 12-quart pot.
ADD:
1 medium diced onion
4 cans (15 ounces each) diced tomatoes
1 (12 ounce) can tomato paste
1/2 cup cider vinegar
1/2 cup brown sugar
49 ounces tomato juice
2 pounds ground beef or ground turkey, browned

Fill remainder of the pot with water. Bring to boil. Let simmer for 2 1/2 to 3 hours (or until beans are cooked). Add salt and pepper to taste.

COWBOY CHILI MIX

2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano leaves
1 teaspoon salt
1/4 cup dried cilantro (or dried parsley leaves)
1/2 cup dehydrated minced onions
1/2 cup dried black beans
1/2 cup dried kidney beans
1/2 cup dried pinto beans
2 snack-size packages (1 ounce each) corn chips, unopened

In Small Batter Bowl, layer ingredients for chili mix in order listed, gently patting each layer before adding the next ingredient. Place corn chip packages on top of chili mix. Cover with lid. Attach the gift tag and give it as a gift.

ATTACH THESE INSTRUCTIONS TO THE JAR:

TO MAKE COWBOY CHILI:

1 recipe Cowboy Chili Mix
1 tablespoon vegetable oil
1 pound (16 ounces) beef stew meat, cut into 1-inch cubes
1 garlic clove, pressed
4 cups water
1 (16 ounce) jar salsa
1 (15 ounce) can tomato sauce

Remove corn chips from chili mix; set aside.

Heat oil in (4 quart) casserole over medium heat until shimmering. Add meat and garlic. Cook and stir 6-7 minutes or until browned.

Stir in chili mix and water; bring to a boil. Reduce heat; cover and simmer 1 1/2 hours.

Stir in salsa and tomato sauce. Simmer, covered, 30 minutes or until beans and meat are tender. Top with corn chips.

Makes about 8 cups chili
