Recipe: Kroger Lucky Bean Mix and Lucky Bean Soup

1 pound dried kidney beans
1 pound dried pinto beans
1 pound dried black-eyed peas
1 pound dried butter beans
1 pound dried split peas
1 pound dried black beans
Combine equal amounts of dried beans. Measure and pack in scant 2 1/2-cup packages. Makes 15 cups bean mix
Use to make Kroger Lucky Bean Soup:
KROGER LUCKY BEAN SOUP
Servings: 6-8
2 1/2 cups Kroger Lucky Bean Mix
water
1 ham bone (or 1 cup diced ham or 1 cup smoked sausage)
1 cup chopped onion
1 garlic clove, minced
1 (10 ounce) can tomatoes and green chilies, diced
2 quarts water
salt and pepper (to taste)
Wash bean mix and soak in water to cover for 2 hours; drain.
Combine beans and remaining ingredients and simmer 3 to 4 hours. Add additional water as needed for desired consistency.
