Recipe(tried): Comfort Food Ideas

Hi Shirleen - I admire you for doing such a wonderful thing! If you have some time, "search" through this site, using words like "make ahead" or "freezable" or "comfort" to find specific recipes that have been previously posted. You will find many ideas!

I have a few suggestions:
Give your hospice patient a thorough questionnaire to find out about allergies, likes and dislikes, favorites, etc. Also use the resources of the agency that has put you in touch, and other proper resources to obtain nutritional information regarding the health issues of your patient to give you a good background.
Double some of your favorite recipes when you make them at home and take the additional servings to your hospice patient. Consider the best method for them to reheat or cook the dish, and package accordingly. If your patient has a crockpot or Tupperware-type containers suitable for the microwave, incorporate them in your planning. Inexpensive foil pans are also available at most grocery stores, which are great for items that are to be cooked in the oven.
Find recipes using the meats, veggies, and other items that are on sale where you shop that week. Plan your menu accordingly.
Consider dishes that are complete meals, when possible. Include a loaf of bread and a "bag of salad greens" with meals to round them out, as well.

I know you will have many other basic recipes suggested, but I will still try to give you some additional ideas - recipes should be easy to find by searching here on this site or using Google.com, or please post another request for any recipe you would like! Some make-ahead ideas off the top of my head are:
A Beef stew, pot roast or burgundy beef, served with chunks of carrots, mushrooms and onions with potatoes or noodles;
Chicken & dumplings (biscuit mix type) with chunks of carrots, onions, potatoes and peas or lima beans;
Soups are ideal! Those made with meat, vegetables, and starch are great because they are healthy and can be easily heated in a microwave or on the stove - e.g., Beef, veggie and barley soup; Minestrone; Bean and ham soup; Split pea and ham soup; Chicken or turkey soup with veggies and noodles; clam chowder; etc.;
An easy roasted chicken can make a primary dinner served with potatoes or rice and a veggie, and the leftovers can be used in a casserole, soup or made into chicken salad for another meal;
If you are feeding a fish lover, fish is so healthy and doesn't have to be expensive. A mashed-potato-topped "fish pie" or buttered-crumb-topped pieces of cod are easy ideas;
Boneless chicken breasts or thighs with any combination of the following: low-fat kielbasa, rice, peppers, onions, tomatoes, lima beans, and corn with rice make a great jambalaya, gumbo or "low country" type dish;
Frozen veggies like lima beans, peas, brussel sprouts, etc., are great to keep on hand when the "fresh" selection in the store isn't great.
Fresh fruit is an important part of every diet - incorporate them when possible and leave them available as a snack. Try incorporating them in a green salad topped with fresh orange and a little red onion and black olive, or one with sliced pears, a little crumbled cheese (blue cheese is traditional, but any favorite cheese will add flavor and calcium) and crunch from nuts (walnuts, pinenuts, almonds, pecans, or other favorites), croutons, bacon, etc., or even the old "waldorf salad" with apples, raisins and celery.
One recipe of a sweet batter bread, brownies, or cookies will also last for a week between visits - consider loaf breads (like zucchini, pumpkin, apple, etc.), lemon pound cake, penuche, snickerdoodles, oatmeal raisin cookies, etc.
