Recipe: Comida Mexicana (using ground beef and cooked rice) (serves 2)

COMIDA MEXICANA

6 ounces lean ground beef
1/3 cup chopped onion
1/3 cup chopped green bell pepper
1/2 small clove garlic, crushed
2 teaspoons chili powder
1/2 teaspoon salt
1 cup cooked rice
1/3 cup canned tomato sauce
1/4 cup milk (or 1/4 cup cottage cheese)
1/3 cup cubed cheddar cheese
Sliced green onion (optional, for serving)
Corn chips (optional, for serving)

Cook beef, onion, green pepper, garlic,, chili powder and salt until meat and vegetables are tender but not brown.

Stir in rice, tomato sauce and milk or cottage cheese; heat thoroughly.

Fold in cheddar cheese.

Serve with fresh green onions and corn chips, if desired.
