Recipe(tried): Spicy Supper Omelet

SPICY SUPPER OMELET

1/2 lb bulk pork sausage
2 cups frozen hash browns
1/2 teaspoon salt
1/3 cup chopped green onions with tops
6 eggs
1/3 cup water
1/4 teaspoon salt

Crumble sausage into a 10-inch skillet. Cook over medium high heat for five minutes, stirring occasionally.

Add potatoes, salt and onions. Cook an additional 5 minutes.

Mix eggs, water and 1/4 teaspoon salt with fork. Pour over potato mixture. Mixture should set at edges at once. Reduce heat to medium. Cover and cook 5 minutes.

With a spatula or a fork, carefully draw cooked portions at edge toward center, tipping pan to let uncooked portions flow to bottom. Cover and cook 5 minutes.
