I have been using my convection oven for a couple of years. You can use your regular recipes with adjustments for time and temperature. Generally, you will want to reduce your temperature by about 50 degrees. Here are some guidelines from the GE Monogram Convection Oven Cookbook:
Beef Roasts - 300 to 325
Pork roasts, chops and fully cooked ham - 325 to 350
Lamb roasts - 325
Poultry:
Whole Chicken - 350 (reduce cooking time as well)
Chicken pieces - 325 to 350 (time about the same as normal)
Turkey unstuffed - 325

Fish steaks, fillets - 325 to 375, cook times same as normal
vegetables - squash 325, cooking time same as normal
baked potatoes - 375 to 400 and reduce cooking time
casseroles - 300 to 350; reduce time 5 to 10 minutes
meat loaf (1 1/2 lbs) - 325; cook time normal
quiche - 325; cook time normal
quick breads - 325; cook about same time or slightly less
layer cakes - 300
cookies - 325
pies - 375 to 400
