Patty, So sorry to take so long to get back with you but here are a few easy and god recipes you might be interested in! Each is fast and easy. I thought they were a good variety. I have so many that are geared specifically for younger kids too if you are intertested, just let me know and I will post them for you.

AuGratin Casserole

1-51/2 oz box augratin potatoes
1-12 oz can of fat free evaporated milk
1 1/2 C hot water
12 oz lean ham, cut into bite sized pieces
1-16 oz bag frozen broccoli

In a 2 qt microwave dish mix potatoes and seasoning packet from box with milk and hot water. Stir in ham. Cook foe 5 minutes in the microwave. Stir in broccoli. Cook 15 minutes stirring occasionally.

Presto Poultry Casserole

1 7.25 ox box Macaroni and Cheese
1 C hot water
1 Can cream of mushroom soup
1/2 can water
1 pound cut up chicken or turkey
1-15 oz can asparagus, drained

Spray 2 qt microwave dish with non stick cooking spray. Mix in powdered cheese with water and soup. Stir in macaroni and poultry. Cook 7 minutes covered. Stir and cook 6 minutes. Stir in asparagus, cover and let sit 2-3 minutes.

Cookie Pops
prep time:5 minutes - cook time:8-12 minutes - assembly time:15 minutes

solid vegtable shortening for greasing pans (I use non stick cooking spray)
1 package plain yellow cake mix
1 C all purpose flour
8 Tablespoons butter, melted
1/4 C honey
2 large eggs
1 C colored sugar sprinkles
48 wooden craft sticks (like popcicle sticks)

Place rack in the middle of oven and preheat to 375 degrees. Lightly grease 2 cookie sheets. Set aside
Place cake mix, flour, melted butter, honey and egs in a large mixing bowl. Blend with electric mixer on low speed for 1 minute. Stop and scrape down sides. Beat on low for another minute. The cookie dough will be thick. With lightly floured hands, shape dough into 1 inch balls. Pour the colored sprinkles into a shallow bowl and roll the balls in them. Place dough balls 2 inches apart on the prepared cookie sheets. Place the pans in the oven. If you need to use both oven racks, rotate pans halfway through cooking time. Bake cookies until edges are light brown, 8-12 minutes. Remove from oven and immediately insert wooden sticks halfway into the side of each cookie. Let cookies rest on cookie sheets for 1 minute. Carefully remove then to cooling wire racks with a metal spatula and cool completely, 20-30 minutes. Repeat with remaining dough if necessary. *You can also substitute Devil's Food Cake mix for Chocolate cookie pops!

Nancy's Popcorn Soup
prep time:2 minutes - Cooking time: 10-12 minutes

2 Cans (14 1/2 oz each) Cream style Corn
1 can whole kernel corn, drained
2 C half and half
1 Can low sodium Chicken broth
1 chicken boullion cube
1 t sugar
2 T butter
black pepper
2 cups popped popcorn
hot pepper sauce (optional)

Place the cream style corn, corn kernels, half and half, chicken broth, and boullion cube in a 4 qt saucepan and heat over medium heat, stirring constantly for the first few minutes. Continue cooking, stirring occasionally, until soup thickens and is hot, but not boiling. 10-12 minute total. Remove from heat and stir in sugar and butter. Season with salt and pepper to taste. Ladle into serving bowls and garnish each serving with some of the popcorn. dash hot pepper sauce if desired.

Popcorn Balls
1/2 stick melted butter
1 bag marshmallows
1/4 C light brown sugar
12 C popped popcorn

In a large heavy pot melt the butter. Add marshmallows and brown sugar. Stir until melted. Remove from heat. Put popcorn in a large bowl and pour marshmallow mixture over it. Toss well. Butter your hands and shape into balls. Set on waxed paper to dry. When dry, wrap in clear plastic wrap and store in a sealed container.

Cornmeal Butter Sticks
1/4 C butter or margarine
1/2 C buttermilk baking mix
1/2 C cornmeal
1/4 C water
salt

Heat oven to 450 degrees. Melt butter in baking pan 9x9x2 inces big.Stir baking mix, cornmeal and water to form a soft dough. turn onto a floured dough board and knead 5 times. Rol into a rectangle 6x4 inches. Cut into 8 strips. Dip each strip into melted butter coating all sides and arrange in pan. Sprinkle salt lightly on strips. Bake 12-15 minutes or until golden brown. Makes 8 sticks 4x 3/4 inches each.
