Recipe(tried): cordon bleu

cordon bleu
4 thin pieces of leg of pork, veal or even chicken breast
4 slices of cheese, swiss or mozzarella or even cheddar
2 slices canned pineapple cut in half
2 eggs + 2 tbs milk
salt and pepper
flour and breadcrumbs.
if they are not thin enough, you can pound them thinner with a meattenderizer between 2 sheets of plastic wrap.
lay the thin strips of meat on the counter or cutting board and spice them with salt and pepper
put the cheese and drained pineapple slice in the middle of the meat and close it up as a small package.
dip the meat in flour, egg wash, and breadcrumbs(seasoned with salt + pepper
spray cookie sheet with pam, or lightly oil the cookie sheet.
bake the cordon bleus for 15 minutes on each side in a 350 degree oven.
serve with lemon slices on the side and garnish with parsley.
**note:
the chicken breast may take an extra minute on each side.
***you can also fill them with cooked spinach and cheese e.g. fetacheese
or with a ragout, a thick white sauce with small chunks of meat.
