Recipe: Cottage Cheese Salad Dressing (1920's)

COTTAGE CHEESE SALAD DRESSING

8 teaspoons olive oil
1 teaspoon vinegar
1/2 teaspoon salt
1/2 teaspoon paprika
1 tablespoon sugar
1 tablespoon Worcestershire sauce
3 tablespoons cottage cheese

"I have been asked for a salad dressing using cottage cheese, and I submit the following:

Eight teaspoons of olive oil, 1 teaspoon of vinegar, 1/2 teaspoon of salt, 1/2 teaspoon paprika and 1 tablespoon of sugar and 1 tablespoon Worcestershire sauce. Place a piece of ice in a bowl, add the salt directly to the ice, then the sugar, paprika and so on. Mix until it is the consistency of mayonnaise. Now add three tablespoons of cottage cheese and continue to mix. This is excellent served with lettuce or cabbage."
