CLEOPATRA DRESSING
"This is a Caesar-style dressing (without anchovies) - great on tossed green salads."
1 tablespoon lowfat yogurt, divided use
1 teaspoon tahini
1 1/2 tablespoons water
1 1/2 tablespoons fresh lemon juice
1/4 cup extra-virgin olive oil
1 clove garlic, minced
1/2 teaspoon Dijon mustard
1 dash salt
1 dash freshly ground pepper
Cream together a little of the yogurt and the tahini in a small bowl. Gradually add remaining yogurt and water and stir until smooth.
Add lemon juice, olive oil, garlic, mustard, salt and pepper and whisk with a fork until combined.
Makes 1/2 cup (4 servings)
