Recipe: Lime-Mint Salad Dressing

LIME-MINT SALAD DRESSING
Source: The New York Times Cook Book by Craig Claiborne
Makes 1 cup

3/4 cup olive oil
1/4 cup lime juice
1 tsp Dijon-style mustard
1 tsp parsley, finely chopped
1 tsp mint, finely chopped
1 tsp chives, finely chopped
1 tsp salt
1/4 tsp white pepper

Combine everything. Place an ice cube in it and beat until mixture thickens to the consistency of medium cream sauce. Good for greens or coleslaw.
