Recipe: Crab Imperial (casserole or stuffing)

CRAB IMPERIAL

FOR THE CRAB MIXTURE:
1 pound blue crab backfin meat
1 cup mayonnaise
2 tablespoons ketchup
2 tablespoons prepared mustard
2 tablespoons chopped parsley
2 tablespoons chopped dill
1 tablespoon Worcestershire sauce
8 to 10 drops hot sauce (approximately)
a generous grinding of fresh white pepper
FOR TOPPING:
bread crumbs
butter

Preheat oven to 375 degrees F. Butter a 2-quart baking dish.*

In a large bowl combine all ingredients for the crab mixture. Put mixture in prepared baking dish. Sprinkle with a small amount of bread crumbs and dot with butter.

Bake at 375 degrees for 20 minutes.

*You can also use individual dishes and handle in the same manner.

Crab Imperial also makes a good stuffing. This recipe can be used to stuff 8 Cornish hens, 8 squab, or fish fillets.
