CRACKLE-TOP PEANUT BUTTER COOKIES
3/4 cup margarine, softened
3/4 cup sugar
3/4 cup brown sugar, firmly packed
3/4 cup creamy peanut butter
1 egg
1 teaspoon vanilla
1 3/4 cup flour
1/2 teaspoon soda
1/2 teaspoon salt
cinnamon sugar* (for topping)
Preheat oven to 375 degrees F.
Cream margarine, sugar, and brown sugar together until light and fluffy. Blend in peanut butter, egg and vanilla.
Combine dry ingredients and add to creamed mixture; mix well. Shape rounded teaspoonfuls of dough into balls; roll in cinnamon sugar. Place on ungreased cookie sheet.
Bake at 375 degrees F for 10 to 12 minutes.
*For cinnamon sugar mix granulated sugar with a small amount of ground cinnamon, to taste.
