CRANBERRY PORK CHOPS
4 boneless, center-cut pork chops, about 3 to 4 ounces each
1 teaspoon vegetable oil
1/2 cup canned cranberry sauce
1 teaspoon prepared mustard
1 Tablespoon red wine vinegar
Brown chops in large non-stick skillet in vegetable oil, turning to brown well on both sides.
Stir in cranberry sauce and remaining ingredients. Cover and simmer gently for 10-15 minutes, depending on thickness of chops.
Makes 4 servings
