Hi TrueColors...I was reading through your request for a Slovak sausage recipe, and I have a Slovak cookbook so checked and found this one I've added. It sounds old, and not sure if some of the meats would be available, or if its even close to what you mentioned.

This recipe is for a large amount, if for five or 6 people, make 1/3 of this recipe. (There isn't any garlic in this recipe..so it may not be the one you wanted. )
JATERNICKY (SLOVAK MEAT AND RICE SAUSAGE)
8 large onions
I pound lard
2 pounds pork hearts
1 pound pork liver
3 pounds pork lungs or plucks
3 pounds pork shoulder
4 tablespoons black pepper
2 tablespoons marjoram
Salt to taste
1 pound pork casings
6 pounds rice
Cook rice in hot salted water until done.
Cook all meat, cool, then grind meat and mix well with rice.
Fry onions in lard, add to rice and meat mixture, mix thoroughly and stuff into pork casings.

It was first published in 1952 and my copy is the 26th printing in 2010) They did this book in honor of their Mothers and Grandmothers. They might still be making them, not sure though.
