Ahhhh, yes, creamed tuna - my mother used to add
peas to it and serve it on mashed potatoes. Here's my
version of the recipe.
CREAMED TUNA
4 Tbsp. butter
4 Tbsp. flour
2 1/2 c. milk
2 (7 oz.) cans chunk tunaMelt butter in a skillet and blend in flour. Add the milk
gradually and cook, stirring constantly, until thickened.
Add the tuna and heat through.

This is the first thing my late mother-in-law taught me
to make right before I married her son in 1957! It's
oh-so-easy!
1 T. butter or margerine
1 T. Flour
1 c. milk
1 6 oz. (whole white or chunk is best)
2 hard cooked eggs, peeled and chopped
1/2 c. cooked frozen peas, optional (canned will do)
Melt butter on saucepan and add flour -- stir for two
minutes (keep it bubbling). Slowly add milk and stir
intil you have a nice, smooth white sauce. Add
well-drained tuna, eggs and peas. Heat through. Salt
and pepper to taste. Serve on toast or biscuits.
