CRUSTY CURRIED CHICKEN
1/4 cup shortening
1/4 cup butter or margarine
1 cup Bisquick Baking Mix (biscuit mix)
1 1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon curry powder
2 (2 1/2 to 3 pound each) broiler-fryer chickens, cut up
Heat oven to 425 degrees F.
Melt 2 tablespoons shortening and 2 tablespoons butter in oven in each of 2 oblong pans, 13x9x2 inches.
Blend baking mix and seasonings; coat chicken pieces. Place chicken skin side down in shortening mixture.
Bake uncovered 40 minutes. Reduce oven temperature to 375 degrees F. Turn chicken and cook 20 minutes longer.
Makes 6-8 servings
