SAUSAGE BURGERS WITH SAVORY SWEET PEPPERS
6 pieces French bread, 4 inches long, or 6 French-style rolls
1 1/2 lb. mild Italian sausage
1/4 cup chopped onion
1 teaspoon oregano leaves
1 egg
1 to 2 large green bell peppers, cut into julienne strips
1 to 2 large red bell peppers, cut into julienne strips
1 large onion, sliced
1 to 2 tablespoons oil
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon vinegar
Slice top portion off of bread pieces, 1/2 to 3/4-inch from top; set aside. Pull out center bread from bottom portions to form bowls with 1/2-inch thick walls. Reserve 1/2 cup crumbs (freeze remainder for future use).
Remove casings from sausage. In large bowl, combine sausage, reserved bread crumbs, chopped onion, oregano and egg mix well. Shape into 6 oblong patties, each about 4 inches long.
WHEN READY TO BARBECUE:
Place patties on grill 3 to 4 inches from hot coals. Cook about 10 to 15 minutes or until browned on both sides and thoroughly cooked.
While burgers are cooking, heat oil in skillet using grill, if desired. Add peppers and sliced onion; cook about 10 to 15 minutes or until crisp-tender, stirring occasionally. Stir in salt, pepper and vinegar.
TO SERVE:
Spoon warm peppers evenly into bottom portions of bread. Top with burgers and top portions of bread.
Makes 6 servings
