LEMON CUCUMBER DRESSING
1 c. mayonnaise
1 tbsp. minced onion
2 tbsp. grated lemon rind
1 sm. carton sour cream or plain yogurt
1 c. finely chopped cucumber, seeds removed
1 tsp. salt
2 tbsp. lemon juice
Serve over diced cooked potatoes or toss salad.
CUCUMBER AND BUTTERMILK DRESSING
1/2 c. buttermilk
1/2 c. sour cream
1 c. mayonnaise
3/4 tsp. onion powder
3/4 tsp. Knorr Aromat
1 tbsp. parsley
1 cucumber, peeled & seeded
1 tsp. dill
Salt & pepper to taste
Mix cucumber in food processor. Put in a bowl and whisking with a wire whisk thoroughly combine all ingredients. Will keep for a week. Went on a vacation to the Homestead in Virginia and for lunch we ate in this darling restaurant. The salad was topped with this wonderful dressing. Of course we had to buy the Knorr Aromat there. I suppose you can get it in one of the Gourmet stores. It is a lovely spice, that can be used on other foods.
CUCUMBER - DILL SAUCE
1 lg. cucumber, peeled, seeded & minced
1/4 tsp. salt
1 (8 oz.) carton plain lowfat yogurt
2 tbsp. grated onion
1 tsp. dried whole dillweed
1/2 tsp. lemon juice
1/4 tsp. white pepper
Combine cucumber and salt. Let stand 15 minutes. Drain well. Combine cucumbers and remaining ingredients in a small bowl. Cover and refrigerate 2 hours. Serve with fish or hamburgers. Yields 2 cups.
CUCUMBER DRESSING
1 med. cucumber
1 sm. onion
2 tbsp. sugar
1 tbsp. plus 1 tsp. lemon juice
2 tsp. Worcestershire sauce
Dash of garlic powder
1 1/3 c. mayonnaise
Grate cucumber and onion, drain well. Then pat dry with paper towels. Combine remaining ingredients. Stir until blended. Add cucumbers and onions, stirring well. Makes 2 2/3 cups.
CREAMY CUCUMBER DRESSING
1/2 c. mock sour cream
1/8 tsp. dill (or 1/4 tsp. fresh dill)
1/4 tsp. Worcestershire sauce
1/8 tsp. salt
1 1/2 tbsp. chopped cucumber
1 tsp. chopped onion
1/4 tsp. capers, drained (opt.)
1 1/2 tsp. water
Place all ingredients into a small container and blend thoroughly. 9 calories per tablespoon.
CUCUMBER DRESSING
1 cucumber
1 sweet onion
1/2 tsp. salt
1/4 tsp. Lawrys seasoned pepper
Cider vinegar
1 c. sour cream
Peel and thinly slice cucumber and onion. Put into small covered bowl and add salt, pepper and enough cider vinegar to cover ingredients. Put into refrigerator overnight. Next day, drain off and save some of the liquid. Stir in sour cream and thin with a little of the drained liquid from the cucumber mix.
CUCUMBERS IN SAUCE
Cucumbers
Onion
1/2 c. vinegar
1/3 c. sugar
1/2 c sour cream
2 tsp. salt
Dash pepper
(1/4 cup water can be substituted for sour cream). Slice cucumbers and onion thin. Mix remaining ingredients and add cucumbers and onions. Refrigerate a while for best flavor.
CUCUMBER CREAM DRESSING
1/2 c. finely chopped unpeeled cucumber
2 tbsp. finely chopped green pepper
2 tbsp. thinly sliced green onion
2 tbsp. thinly sliced radishes
1 c. dairy sour cream
2 tbsp. milk
1/2 tsp. salt
Dash of pepper
In mixing bowl combine cucumber, green pepper, onion and radishes. Stir in sour cream, milk, salt and pepper; mix well. Transfer to storage container. Cover and chill. Garnish with additional radish slices and a sprig of fresh watercress if desired. Makes 1 1/2 cups.
ONION AND CUCUMBER SALAD
1/4 c. vegetable oil
2 tbsp. vinegar
2 tbsp. sugar
1 tbsp. water
1/2 c. sour cream
Salt to taste
1 lg. cucumber, sliced
1 med. red onion, sliced
In bowl, combine oil, vinegar, sugar, water, sour cream and salt. Add cucumbers and onion; toss to coat. Refrigerate several hours or overnight. Yield 4 to 6 servings.
CUCUMBER SALAD
2 cucumbers
1 sm. onion, diced
2 tbsp. mayonnaise
2 tbsp. sour cream
Salt and pepper to taste
Dash of chopped basil
3 tbsp. white vinegar
Mix all together and serve chilled. Mayonnaise may be omitted and sour cream, vinegar, and oil are used.
CUCUMBER SALAD
3 lg. cucumbers, sliced thin
1 lg. onion, sliced
1/2 tbsp. salt
2 tbsp. sugar
1/3 c. vinegar
1/3 c. cream
Slice cucumbers and onions; sprinkle with salt. Soak with glass plate on top and press down, 2 1/2 hours, drain twice. Then add sugar, vinegar and cream. Chill and serve.
