Recipe: Curried Chicken Soup (using cooked chicken)

CURRIED CHICKEN SOUP

1 onion, chopped
1 cup celery with leaves, thinly sliced
1 apple, peeled, cored, and chopped
4 tablespoons margarine
1/4 cup flour
4 cups chicken broth
1/2 teaspoon curry powder
2 cups diced cooked chicken
1 cup bean sprouts
salt and pepper, to taste

Saute onion, celery, and apple in margarine for 5 minutes, or until tender.

Stir in flour. Gradually stir in broth and curry powder. Bring to a boil.

Add chicken and sprouts. Reduce heat, simmer for 5 minutes. Season to taste with salt and pepper.

Makes 6 servings
