Recipe(tried): Spoon Bread from Hotel Roanoke

Side Dishes - Assorted
This recipe is from the Hotel Roanoke in Roanoke, VA. I can't remember what Morrison's spoon bread tastes like, but if this isn't tart enough (you said you thought it had sour cream in it), maybe replacing all or part of the milk with buttermilk might do it. I have a bunch more spoon bread recipes if this isn't what you're looking for.

SPOON BREAD - HOTEL ROANOKE
about 10 servings

1 1/2 cups white corn meal
1 teaspoon sugar
1 1/3 teaspoon salt
1 1/2 cups boiling water
1/4 cup butter
5 eggs
2 cups milk
1 tablespoon baking powder

Preheat oven to 350 degrees F.

Mix corn meal, salt and sugar together. Scald with boiling water. Add melted butter. Beat eggs; add milk. Combine mixtures. Add baking powder. Pour into oiled 9x13-inch pan.

Bake 30-40 minutes. Serve with lots of butter on it.

Makes about 10 servings.

(Historical note: Spoon bread originated from the Native American Indian porridge called "suppawn".)
