Recipe: Danish Cheese Salad (1970's)

DANISH CHEESE SALAD

"Good as part of a party buffet or the feature of a luncheon."

1 1/2 cups cubed Samsoe or Tybo cheese
1 1/2 cup cubed cooked ham
1/2 cup chopped sweet pickle
1/2 cup sour cream
2 tablespoons mayonnaise
2 tablespoons heavy (whipping) cream
1 tablespoon lemon juice
2 teaspoons minced shallots
1 teaspoon spicy prepared mustard
1 teaspoon vinegar
1/8 teaspoon paprika
1/2 cup canned sliced beets, drained and cut in half

Combine cheese and ham cubes and chopped pickle. Set aside.

Combine sour cream, mayonnaise, heavy cream, lemon juice, shallots, mustard, vinegar, and paprika.

Combine cheese, ham and pickles with the sour cream dressing mixture. Carefully fold in sliced beets.

Note on recipe card: Great - filling.

Makes about 4 servings (1 cup each)
