TENDER GREENS WITH STRAWBERRY VINAIGRETTE
1 cup strawberries, hulled and sliced
1 small red onion, sliced thinly
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar
Coarse salt and freshly ground pepper (to taste)
4 big handfuls tender mixed greens, torn into large pieces.
Combine strawberries, onion, oil, vinegars, salt and pepper, to taste, in salad bowl and give the dressing a stir. Let it sit on the counter for at least 30 minutes for the berries and onion to marinate.
Before serving, dip a bit of lettuce into dressing and taste; adjust salt and pepper as needed.
