Recipe: Deviled Tomatoes

Deviled Tomatoes

Makes 4 servings

Sauce
2 tablespoons butter
1 teaspoon confectioners' sugar
1 teaspoon dry mustard
1 teaspoon salt
1/8 teaspoon pepper
1 yolk, hard-cooked egg, mashed
1 raw egg, beaten
1 1/2 tablespoon hot vinegar

Coating
1/4 cup flour
1/8 teaspoon salt
1/8 teaspoon pepper
3 tomatoes, cut in thick slices
4 tablespoons butter

Over low heat in a saucepan, melt butter. To melted butter, add sugar, mustard, salt, pepper, egg yolk, raw egg, and vinegar. Stir mixture until thick and set aside.

In a small dish, mix flour, salt and pepper. Coat each tomato slice in the mixture.

In a frying pan, melt butter. Brown both tomatoes slice sides until golden brown. Pour sauce over tomatoes and serve.

Picnicking & Tailgating:
Heat in microwave before leaving and place in thermal container. Heat sauce separately and place in thermal container. At the picnic or tailgate site, combine and enjoy.
