Recipe(tried): Diced Watermelon Pickles

Diced Watermelon Pickles

4 qt. prepared watermelon rind
common salt
water
1 lemon - sliced very thin
pickling syrup

Trim skin and meat from the rind. Cover with cold salted water(1.4 cup salt to
2 qts water) Soak overnight, then drain. COver with fresh cold water and boil until tender. Drain. Add rind and lemon slices to pickling syrup and simmer gently about 1 hour or until clear. Remove spice bag from syrup. Pack pickles into hot sterilized jars. Fill to brim with boiling syrup. Seal. Process.

Pidkling Syrup

2 qts. cider vinegar
2 cups water
4 # sugar
2 T whole cloves
2 T whole allspice
1 piece ginger root
3 T cracked whole cinnamon

Mix vinegar, water and sugar in large heavy kettle. Add spices tied in cheesecloth bag. Bring to a boil and boil rapidly for 5 minutes.

Makes 4 quarts. When I make this, I usually do it in pints instead.
