DIJON POTATO SALAD
1/2 cup mayonnaise
1/4 cup Dijon mustard
2 tsp minced fresh onion
2 tsp chopped fresh parsley
1 tsp dried tarragon
1 tsp chicken bouillon dissolved in 2 tsp Warm water
Ground cayenne pepper (optional, to taste)
2 tbsp tarragon vinegar
Salt and pepper (to taste)
8 medium potatoes, quartered, cooked
Lettuce leaves
2 Hard cooked eggs, sliced
Combine mayonnaise, mustard, onion, parsley, tarragon, bouillon and cayenne; whisk. Add vinegar; whisk. Pour over potatoes; toss. Add salt and pepper to taste.
To serve, place on lettuce leaves on individual plates and top with egg.
Makes 4 servings
