Recipe: Cranberry Pineapple Medley (Jell-O recipe, 1980's)

CRANBERRY PINEAPPLE MEDLEY

"JELL-O Gelatin makes cranberry merry."



1 (20 oz.) can chunk pineapple in syrup
Water (as needed)
2 packages (4-serving size) or 1 package (8-serving size) Jell-O Brand Raspberry Flavor Gelatin
2 cups boiling water
Ice cubes
2 1/2 cups fresh cranberries, chopped
1/2 cup chopped pecans
FOR GARNISHING (optional):
Endive leaves
Sugared cranberries

Drain pineapple, reserving syrup. Add water to pineapple syrup to make 1 cup; set aside.

Dissolve gelatin in boiling water; set aside.

Combine measured pineapple liquid and ice to make 2 cups. Add to gelatin, stirring until slightly thickened. Remove any unmelted ice. Chill until thickened, about 10 minutes.

Fold in pineapple, cranberries and pecans. Pour into 8-cup bowl. Chill until set, about 3 hours.

Garnish with endive leaves and sugared cranberries, if desired.

Makes about 6 1/2 cups or 12 servings
