DOUBLE CHOCOLATE CHIP COOKIES WHEAT FREE AND DAIRY FREE.
1 cup dairy free/soy free margarine, softened
3/4 cup sugar
3/4 cup brown sugar, firmly packed
3 tablespoons oil
3 tablespoons water
2 teaspoons baking powder, mix with oil/water for egg substitute
1 teaspoon vanilla extract
2 1/4 cups non wheat flour, barley/oat/rice or a combination
2 teaspoons arrowroot powder
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup dairy free chocolate chips (or raisins or nuts)Preheat oven to 375 F. Beat margarine at medium speed until fluffy gradually add sugars, beating well. Mix oil/water/baking powder add to sugar mixture. Add vanilla beat until smooth. Combine flour, arrowroot, cocoa, baking soda and salt. Gradually blend with creamed mixture. Stir in chocolate chips. You may add 1/2 cup nuts or raisins if you with. Use half nuts or raisins and 1/2 cup chocolate chips. Drop by teaspoonful onto ungreased cookie sheets.
Bake at 375 for 9-11 minutes. Cool slightly transfer to wire racks to cool completely.
Store in airtight container. Yield: 70 cookies
Note: If wheat is no problem, replace non-wheat flour with an equal portion wheat flour.
For Dairy Free Margarine..read the ingredients on the package.
