Recipe: Greek Chicken Casserole with Lemon Rice, Spinach and Feta Cheese

GREEK CHICKEN CASSEROLE WITH
LEMON RICE, SPINACH AND FETA CHEESE


1 onion, finely chopped
2 cloves, garlic, minced
2 Tbsp. olive oil
1 cup rice
2 cups chicken broth
1 (10 oz.) frozen chopped spinach, drained
4 Tbsp. lemon juice
1/4 cup chopped green onions
1/4 cup crumbled feta cheese
1/3 cup dill weed (or to taste)
2 cups diced, cooked chicken

In a Dutch oven casserole, saute onion and garlic in oil until onion is transparent.

Stir in rice and chicken broth, cover pan, and simmer mix for 30 minutes or until rice is tender and liquid is absorbed.

Meanwhile, in a bowl, toss together the remaining ingredients until nicely mixed. Stir spinach mixture into cooked rice and heat through.

Servings: 4
