Recipe: Double-Chocolate Snack Cake (mixed in the pan, no eggs)

DOUBLE-CHOCOLATE SNACK CAKE

1 2/3 cups all-purpose flour
1 cup sugar
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup vegetable oil
1 teaspoon vinegar
1/2 teaspoon vanilla extract
1/2 cup semisweet chocolate chips
Powdered sugar (for garnish)

Preheat oven to 350 degrees F.

In an ungreased 8-inch square baking pan, mix together flour, brown sugar, cocoa powder, baking soda and salt until thoroughly combined. Stir in 1 cup water, vegetable oil, vinegar and vanilla. Sprinkle chocolate chips over batter.

Bake 35-40 minutes, or until toothpick inserted in center comes out clean. Remove to a wire rack and cool.

Sprinkle with powdered sugar and serve.

Makes 1 (8-inch) square cake
