Down-Home Chocolate Mayonnaise Cake
From The Cake Bible

This had an interesting history story about the wife of a Hellmann's salesman whose wife was trying to help him and invented this particulr recipe.

1/3 c. unsweetened cocoa
1 c. boiling water
1 tsp. vanilla
3/4 c. mayonnaise
2 c. sifted cake flour
1 c. sugar
2 tsp. baking soda
1/2 tsp. salt

In medium bowl whisk together cocoa and boiling water until smooth. Whisk in mayo. and vanilla. In large bowl combine the remaining ingredients and mix on low speed for 30 sec. to blend. Increase speed and beat for 1 min. to aerate and develop cake's structure. Scrape batter into prepared pans (it will be very liquid) and fill the pans only about 1/3. Bake at 350 for 20-25 min. or until tester comes out clean.
