Recipe: Zeyrekhane Turkish Quick and Easy Baked Zucchini (using mint and goat cheese)

TURKISH QUICK AND EASY BAKED ZUCCHINI

8 small zucchini
Olive oil spray
4 ounces goat cheese, cut into thin strips
Small bunch of fresh mint, finely chopped
Freshly ground pepper

Preheat oven to 350 degrees F.

Tear 8 rectangles of foil large enough to hold each individual zucchini and lightly spray each piece with olive oil spray.

Using a sharp knife, cut a thin slit along the length of each zucchini. Insert pieces of goat cheese into the slits, then sprinkle with mint and black pepper and lightly spray with olive oil.

Wrap each zucchini in its foil, place on a baking sheet, and bake for 25 minutes. As a side dish this serves 8.

Makes 8 servings
