Recipe: Spicy Tortilla Soup

Spicy Tortilla Soup

2 quarts chicken stock
2 chicken breasts, cooked with meat removed from bone
2 onions, chopped
2 poblano peppers, seeds removed, chopped
1 can of whole tomatoes
3/4 bunch fresh cilantro,
chopped fresh chilies to taste (remove the seeds to decrease heat)
1/2 lb Monterey Jack cheese, grated
4 to 6 tortillas, fried crisp and crumbled
salt
pepper
1 tsp cumin
pinch oregano

Saute onions and peppers.

Add stock and season with cumin, oregano and salt and pepper. Add tomatoes and bring to a simmer.

Add chicken and heat through.

Serve with cilantro, tortillas and cheese.
