Recipe: Dutch Pannekoeken (Baked Pancake) with Apple Topping

PANNEKOEKEN WITH APPLE TOPPING
This is very close to the Pannekoeken we enjoyed at a lovely cafe in Haarlem, The Netherlands, overlooking Grote Kerk and Grote Markt.
APPLE TOPPING:
1 sweet cooking apple
1/2 cup apple juice
PANCAKES:
1/2 cup flour
2/3 cup milk
1 egg white
powdered sugar
APPLE TOPPING:
Before starting the pancakes, peel and thinly slice a sweet cooking apple. Poach in apple juice, just until softened.
After turning the pancake over, Slide finished pancake onto a large plate and sift powdered sugar over the top.
PANCAKES:
Blend the flour, milk and egg white in a blender until smooth.
Heat a 10-inch frying pan over high heat. Spray with cooking spray. Pour half the batter into the pan, swirling to make a thin layer that covers the bottom of the pan. Cook until the top appears dry.
Slide the pancake onto a plate, then turn over and slide back into the pan. Arrange half of the apple slices on top and cook for about a minute, or until browned on the bottom.
Slide onto a large plate, sift powdered sugar over the top and serve immediately. Repeat with the remaining batter.
Note: The recipe can easily be doubled
