Easy Black Bean Chili
1 medium onion, chopped
1 medium green bell pepper, chopped
2 garlic cloves, pressed
2 cans (15 oz. each) black beans, rinsed and drained
1 can (28 oz) diced tomatoes, undrained
1 can (15 oz.) tomato sauce
1 T. chili powder
Combine chopped onion, bell pepper, and pressed garlic in pot and cook over medium heat 2-3 minutes, or until vegetables are crisp-tender. Stir in beans, tomatoes, tomato sauce and chili powder. Bring to a boil over medium heat. Cover; simmer over medium-low heat 30 minutes.
I use rotel tomatoes in this...and, it makes a wonderful dip. Just sprinkle cheese on top and serve with scoop shaped Fritos.
