Recipe: Easy & elegant salmon roll
Misc.Have always wanted to try this and will do so for my next party - can't say it is tried and tested yet!
SALMON ROLL (easy and elegant)
1/2 small onion
8 oz. Neufchatel or cream cheese
1 x 14 oz. can red salmon
1 cup fresh parsley, finely chopped
Chop onion in food processor. Add cheese and salmon, from which skin and bones have been removed. Mix in processor with short pulses just until blended.
Place a piece of waxed paper about 18 ins. long on your work surface. Sprinkle the parsley to cover the paper. Form the salmon mixture into a log shape about 14 ins. long on the parsleyed paper. Using the paper, roll the log up and over until it is covered with parsley. Transfer to a serving dish with a spatula. Cover and refrigerate until ready to serve. Serve with veg. or as a spread with crackers.
Serves 10 - 12.
