Are you refrigerating the dough for 4-8 hours? After you roll out the dough and cut the cookies you need to place the trays in frig for 2 more hours, bake at 300 degrees for 20-25 minutes. The cookies should not brown on top and only lightly brown on the bottom. They will be soft when you pull them out but harden as they cool
