SAUTEED SPINACH WITH MUSHROOMS
1 tsp. olive oil
1 tsp. toasted sesame oil
1 1/2 cups sliced mushrooms
1 Vidalia onion, thinly sliced
2 cloves garlic, sliced
1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry
1/2 tsp. minced ginger
2 tsp. soy sauce
In a medium saucepan, over low heat, warm the olive oil and sesame oil. Add the mushrooms, onions and garlic. Saute 15-20 minutes, or until the onions and mushrooms are soft.
Add the spinach, ginger, and soy sauce. Cover and cook for 10 minutes, or until the spinach is hot.
