I just love Quesadillas but I never have leftover chicken. Well a blue moon came and I had leftovers one day. Here is the recipe I invented.
Great for a super speedy meal.
-Whole Wheat Tortillas Large or small doesn't matter(you can use another flavour if you like)
-cooked chicken
-your favourite jarred salsa
-grated cheese(s) I used low fat cheddar as that is what I had. I may have used low fat mozzarella too.
-You can add chopped onions if you'd like. Either green onions or cooking onions.
Put the cut up chicken on one side of the tortilla and cover with cheese and onions if using
on the other side of the tortillas, spread the salsa.
fold the tortilla in half (folding the salsa side is easier.
Put in skillet coated with no stick spray. Cook on one side then flip and cook the other. You just want to warm the insides up and melt the cheese. You don't need to cook it very long.
oooey, googey, good.
