INSIDE-OUT SPRING ROLLS
Oil (for frying pot stickers) plus 1 tablespoon olive or peanut oil (for stir-frying the vegetables)
1 (16 ounce) bag frozen pot stickers
1 carrot, thinly sliced on the diagonal
1 small head Napa cabbage,* thinly sliced
2 tablespoons low-sodium soy sauce
1/4 cup salted peanuts
Fry the pot stickers according to package directions.
Meanwhile, heat 1 tablespoon olive or peanut oil in a nonstick skillet over medium-high heat. Add carrot and cabbage and toss to coat. Add soy sauce and cook for 2 to 3 minutes.
TO SERVE:
Transfer vegetables to individual bowls, top with pot stickers and sprinkle with peanuts.
*Napa cabbage, also known as Chinese cabbage, has thinner, more crinkly leaves than standard green cabbage and is milder in flavor. If you can't find Napa cabbage, use green cabbage in its place.
VARIATION:
Make your life even easier by substituting 3 cups of packaged slaw mix (found in the produce section of most supermarkets) for the sliced carrot and cabbage.
