Recipe: Merry Christmas Cookies (from Betty Crocker Picture Cookbook, 1950 with honey-lemon variation)

MERRY CHRISTMAS COOKIES
Source: Betty Crocker Picture Cookbook, 1950
Makes 5 dozen (2 1/2 inch) cookies
2/3 cup molassas
1/3 cup soft shortening
1/3 cup brown sugar
1 egg
2 3/4 cups sifted flour
2 tsp. ground cinnamon
1 tsp. ground ginger
1 tsp. baking soda
1 tsp. salt
Mix molasses, shortening, brown sugar, and egg together thoroughly; set aside.
In another bowl mix together flour, cinnamon, ginger, baking soda, and salt. Combine with moist ingredents. Chill dough.
WHEN READY TO BAKE:
Preheat oven to 375 degrees F. Lughtly grease baking sheets.
Roll out to 1 1/4 inch. Use cookie cutters. Place cookies 1-inch apart on prepared baking sheet.
Bake 8 to 10 minutes. Remove from pan to cooling rack.
Cool and decorate.
Notes. There are several variations but I think this is the one you are looking for:
FOR HONEY-LEMON COOKIES:
Use directions above, except substitute honey for molasses and regular sugar for brown sugar. Use 1 tsp. lemon extract in place of spices.
I got this over the phone from my mom. =)
I'm going to try it too. I've been serching for a honey sugar cookie recipe. But I think I'm going to use vanilla instead of lemon extract.
