IMPOSSIBLE CHICKEN 'N BROCCOLI PIE
1 (10 ounce) package frozen chopped broccoli, thawed and drained*
2 cups shredded Cheddar cheese (8 ounces), divided use
1 1/2 cups cut-up cooked chicken
2/3 cup chopped onion
1 1/3 cups milk
3 eggs
3/4 cup Bisquick Original baking mix
1/2 tsp. salt
1/4 tsp. pepper
Heat oven to 400 degrees F. Grease pie plate, 10x1-1/2 inches.
Mix broccoli, 1 1/3 cups of the cheese, chicken and onion in plate.
Stir milk, eggs, baking mix, salt and pepper with fork until blended. Pour into pie plate.
Bake 30 to 35 minutes or until knife inserted in center comes out clean.
Sprinkle with remaining cheese. Bake 1 to 2 minutes longer or until cheese is melted. Cool 5 minutes.
*To thaw broccoli in microwave, remove outer wrapper from package; pierce package with knife. Microwave on High 1 1/2 to 2 1/2 minutes or until partially thawed. Break up broccoli with fork; drain thoroughly.
VARATION:
IMPOSSIBLE BROCCOLI 'N CHEDDAR PIE:
Use 2 packages (10 ounces each) frozen chopped broccoli. Omit chicken.
High Altitude Directions (3500 to 6500 feet): Bake 35 to 45 minutes.
