Recipe(tried): Fajita Quesadillas are my all time...

I don't really use a recipe... you could follow any fajita recipe tho. After
you have made a batch, you would soften the tortillas in the microwave, and
fill half of each tortilla with some of the meat (beef works too) bell
pepper/onion mixture. Top the mixture with some grated cheddar cheese, and
heat in the micro or oven, until the cheese is melted. We serve these with
Guacamoli, Sour Cream, and Salsa.
I actually make a double batch of fajitas for one dinner, freezing the cooked
extra batch for a later "dinner on the double" (so to speak) of fajita
quesadillas!!! I do this a lot... double cooking, so the leftovers can be
transformed later into another meal.
