Recipe: low fat chicken quesadilla-repost

Here is a low fat version from a magazine that I have. I haven't tried it but
the picture looks really good!

Low Fat Chicken Quesadillas- makes 30 wedges

1 14oz tin garbanzo beans (chick peas), drained and mashed
1/2 c fat free sour cream, divided
1/2 salsa, divided
1 large garlic clove, minced
1 pkg 7" lite flour tortillas
non stick cooking spray
1 c cooked, shredded chicken
1/3 c chopped red or green pepper
1/3 c chopped onion
2 tbsp chopped fresh cilantro
1c grated monterey jack cheese

Preheat oven to 400F
Combine chick peas, 2tbsp of each sour cream and salsa, and the garlic in a
small bowl; mix well; set aside.(Remaining sour cream and salsa will be used
for topping.) Spray lightly one side of each tortilla with cooking spray.
Arrange 5 tortillas, oil side down on two baking sheets. Spread 1/5 of the
chick pea mixture over each tortilla, leaving 1/2" border. Combine chicken.
pepper, onion and cilantro in a bowl. Spread 1/5 of chicken mixture over chick
peas, followed by 1/5 of the cheese. Cover with the remaining tortillas, oil
side up. Place trays in oven for 8-10 minutes or until lightly browned and
crisp. Remove from oven; let sit 5 minutes before cutting. Cut each into 6
wedges. Serve with the remaining salsa and sour cream.
