Summer is here and alot of people are searching for recipes that help maintain their diet also. When I started my quest to lose weight I totally changed all my recipes to lowfat and healthier ones. This is one of the favorites and no one can tell the difference.
Fat Free Potato Salad
1/2 cup Sugar
1/2 cup white vinegar
1/2 cup water
2 teaspoons prepared mustard
2 containers (3 ounces each) Egg Beaters
Salt and Pepper to taste
7 cups of potatoes--cooked, peeled, and cubed to desired size (about 7 medium potaotes)
Celery, onion, and green pepper--diced(add to your taste
16 ounce Jar of Fat Free Miracle Whip or Fat Free Mayonnaise
Mix first four ingredients in a medium saucepan and bring to a boil.
In a separate bowl, place Egg Beaters; whisk about 1/2 cup of hot mixture into the eggs. Whisk this mixture back into the hot mixture; cook and stir until it thickens. Remove from heat and add desired amounts of salt and pepper. Whisk Miracle Whip or Mayo into egg mixture.
In a separate bowl place potatoes and desired amounts of celery, onion, and green pepper; pour dressing over top and stir to coat well. Refrigerate several hours before serving.
Makes 14 servings (1/2 cup each)
