Carrabba's lobster sauce is a wine sauce but you use sherry.
1 tbsp butter
2 tbsp diced shallots or onion
1/4 cup sherry
1 cup heavy (whipping) cream
salt and pepper (to taste)
diced tomatoes, meat only (no seeds)
Make sure to flame off sherry before adding cream.
Carrabba's might use green onion or leeks. Tastes better the longer it sits.
