Recipe: Fiesta Chicken Kiev

Fiesta Chicken Kiev

4 whole chicken breasts
3 Tbsp. butter
3 Tbsp. Old English cheese spread
2 tsp. minced onion
2 Tbsp. chopped green chilies
1/4 c. butter, melted
1 c. crushed Cheddar cheese crackers
1 1/2 Tbsp. taco seasoning mix

Half, bone and beat raw chicken pieces with mallet or foil covered brick until flat. Beat together butter and cheese spread. Add onions and chilies. Divide mixture between 8 chicken pieces. Roll up each piece, tucking in ends and secure with a toothpick. Dip each roll in melted butter, then mixture of crackers and seasoning mix. Arrange rolls in 2-quart baking dish and cover with wax paper. Cook in microwave set on High for 10 to 12 minutes. Let stand 5 minutes. Serve on bed of rice.
