I hope you read my messages below on your original post, I included a letter
and the address from the Cheesecake Factory... Anyways..I felt so bad I wanted
to share with you my favorite cheesecake recipe.We love cheesecake which is why
I set out on the quest to get the recipe you were looking for in the first
place. My husband says it's the best he ever tasted...My whole family enjoys
it! We are lover's of cheesecake and this is the best recipe I have found to
date...Enjoy if you try and let me know how you liked it!
Deluxe Cheesecake
3/4 cup butter or margarine, softened (I use butter)
all purpose flour
sugar
3 egg yolks
grated peel of 2 lemons**
5 8oz packages cream cheese
5 eggs
1/4 cup heavy or whipping cream (I use heavy)
1 tablespoon grated orange peel**
1/4 tsp. salt
1 cup sour cream**
In bowl with mixer at low speed, beat butter, 1 1/4 cups flour, 1/4 cup sugar,
1 egg yolk and half of lemon peel until dough is well mixed.
Refrigerate, covered, for 1 hour. Preheat oven to 400 degrees F. Press 1/3 of
dough into bottom of 10 inch springform pan. Bake 8 minutes; allow to cool.
Turn oven to 475 degrees F. In large bowl with mixer at medium speed, beat
cream cheese just until smooth; slowly beat in 1 3/4 cups sugar until smooth.
With mixer at low speed, beat in 3 Tablespoons flour and remaining ingredients
except sour cream. At high speed, beat 5 minutes.
Press rest of dough around side of springform pan to within 1 inch of top; do
not bake dough. Pour cheese mixture into pan; bake 12 minutes. Turn oven to 300
degrees F; bake 35 minutes. Turn off oven; leave in oven 30 minutes. Remove;
cool in pan on rack. ** Chill.
Remove side of pan. With large spatula, loosen cake from pan; slide onto
serving plate. Spread top of cheesecake with sour cream. **
** My notes...You can omit the lemon and orange peel gratings if you like. I do
sometimes, it is still wonderful.
After the cheesecake cools, before I chill it, I take a mixture of 1 cup sour
cream, 2 Tablespoons sugar, 1 tsp. vanilla, and spread it on top of the
cheesecake. I then return it into a 350 degree F oven for approx. 10 minutes
(just until the topping is set and ever so lightly browned) I prefer this to
just topping the cheesecake with plain sour cream as the recipe suggests.
