ISO: Cheesecakes for Weddings

I have been ask by my daughter to make several cheesecakes for the wedding for
the grooms table. I made my first one today to practice, my first one ever, it
was hard like overcooked but taste okay. Is there anything I can do to help it
not be so hard and lots of hints for the ones for the wedding. She wants
different flavors.
